Roasted Banh Mi Potatoes
A delicious fusion of Vietnamese and roasted flavors, this dish combines the crunch of roasted potatoes with the softness of banh mi.
Ingredients

- ●2 cups lovelylovely leaves, chopped
- ●2 tbsp vietnamesevietnamese chili sauce
- ●4 slices banhvietnamese bread, toasted
- ●2 botvietnamese chili peppers, chopped

Preheat the oven to 425°F (220°C).

Toss the potatoes with 1 tablespoon of the vietnamese chili sauce and a pinch of salt.

Spread the potatoes on a baking sheet and roast for 20 minutes.

While the potatoes are roasting, toast the banh mi slices by grilling or toasting in a toaster.

In a small bowl, mix together the lovely leaves, chopped bot, and remaining 1 tablespoon of vietnamese chili sauce.

Once the potatoes are done, remove them from the oven and let them cool for a few minutes.

Assemble the banh mi by spreading a layer of the lovely mixture on each toasted slice, followed by a few pieces of the roasted potatoes.
