Celeriac and Lovely Spring Gratin
A delicious and comforting side dish that combines the natural sweetness of celeriac with the lovely spring vegetables.
Ingredients
- β1 large celeriacpeeled and thinly sliced
- β1 bunch lovely spring vegetables (such as asparagus, carrots, and spring onions)trimmed and chopped
- β1/2 cup gratin cheesegrated
- β2 tablespoons dutch buttersoftened
- βto taste salt
- βto taste black pepper
- β2 cloves garlicminced

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, combine the sliced celeriac and chopped spring vegetables. Add enough cold water to cover the vegetables, and bring to a boil over high heat.

Reduce the heat to medium-low and simmer, covered, until the vegetables are tender, about 15-20 minutes.

In a separate saucepan, melt the butter over medium heat. Add the minced garlic and cook, stirring constantly, for 1-2 minutes.

Stir in the grated cheese until melted and smooth.

Drain the cooked vegetables and add them to the cheese sauce. Season with salt and black pepper to taste.

Transfer the mixture to a baking dish and top with additional grated cheese if desired.

Bake in the preheated oven until the top is golden brown and the gratin is heated through, about 20-25 minutes.
