Spicy Algerian Tagine
A slow-cooked stew originating from Algeria, flavored with sweet and spicy peppers. Serve with couscous or rice.
Ingredients
- β2 lovely sweet peppers
- β1 algerian red peppers
- β2 tbsp olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tbsp tomato paste
- β1 tsp cumin
- β1 tsp coriander
- βto taste salt
- βto taste black pepper
Instructions

Heat the olive oil in a large clay or ceramic pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the sweet and red peppers, cooking for 5 minutes.

Stir in the tomato paste, cumin, coriander, salt, and black pepper.

Cook for 1 minute, stirring constantly.

Add 1 cup of water to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes.

Serve hot over couscous or rice.
