Lamb Iskender Kebab
A traditional Turkish dish made with thinly sliced lamb, served in a rich tomato sauce and topped with crispy bread and melted butter.
Ingredients
- β1 lb Lamb shoulderThinly slice the lamb
- β2 tbsp Tomato pasteCrushed or blended
- β2 tbsp Olive oilFor brushing the lamb
- β1 medium OnionThinly sliced
- β3 cloves GarlicMinced
- β1 tsp AllspiceGround
- β1 tsp PaprikaSweet
- βto taste Salt
- βto taste Black pepper
- β4-6 slices BreadPita or baguette
- β2 tbsp ButterMelted

Preheat the grill to medium-high heat.

In a large bowl, whisk together the olive oil, garlic, allspice, paprika, salt, and pepper.

Add the sliced lamb to the bowl and toss to coat with the marinade.

Thread the lamb slices onto skewers, if using.

Grill the lamb for 5-7 minutes per side, or until cooked to your liking.

While the lamb is cooking, heat the tomato paste in a large saucepan over medium heat.

Add the sliced onion to the saucepan and cook until softened, about 5 minutes.

Stir in the melted butter and season with salt and pepper to taste.

Serve the lamb hot, topped with the tomato sauce and crispy bread.
