Coconut Shrimp with Mango Salsa
A sweet and savory combination of crispy coconut shrimp served with a fresh mango salsa.
Ingredients

- ●1 cup all-purpose flour
- ●1 cup panko breadcrumbs
- ●1/2 cup unsweetened shredded coconut
- ●1 cup milk
- ●1 egg
- ●2 mango
- ●1/2 red onion
- ●1 jalapeño pepper
- ●1/2 teaspoon cumin
- ●1/2 teaspoon salt
- ●1/4 teaspoon pepper

In a shallow dish, mix together flour, panko breadcrumbs, and coconut.

In a separate dish, beat egg and mix in milk.

Dredge shrimp in flour mixture, then dip in egg mixture, and finally coat in coconut mixture.

Heat about 1/2 inch of oil in a large skillet over medium-high heat.

Fry shrimp in batches until golden brown and cooked through.

Drain shrimp on paper towels.

To make mango salsa, combine diced mango, red onion, jalapeño pepper, cumin, salt, and pepper in a bowl.
