Cheesy Casserole Quesadillas
A twist on traditional quesadillas, these cheesy casseroles are perfect for a quick and easy Mexican-inspired meal.
Ingredients
- β1 cup shredded cheddar and Monterey Jack cheese blend Melted Cheese
- β1 1/2 cups cooked and cooled Mediterranean Pasta
- β1 pound cooked and sliced Polish Sausage
- β2 large flour tortillas Casseroles
- β1 tablespoon Olive Oilfor brushing tortillas
- β1/4 cup Chopped Fresh Cilantrooptional
- β Salt and Pepper
- β1 cup Sour Creamoptional
- β1 cup Salsaoptional
- β1/2 cup Guacamoleoptional

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat. Add the sliced Polish sausage and cook until browned, about 5 minutes.

In a separate bowl, combine the melted cheese and cooked pasta. Mix well to combine.

Brush the tortillas with a little water and place them on a flat surface.

Spoon the pasta and cheese mixture onto half of each tortilla, leaving a 1/2-inch border around the edges.

Top the filling with the cooked sausage and fold the tortillas in half to enclose.

Place the quesadillas on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until the cheese is melted and the tortillas are crispy.
