Spiced Cherry Pasta with Earthy Mushrooms
A unique fusion of Indian and Italian flavors, this spiced cherry pasta dish is made with mildly earthy portuguese portobello mushrooms and sweet cherry tomatoes.
Ingredients

- β1 cup Portuguese Portobello MushroomsMildly earthy
- β1 cup Cherry Tomatoes
- β1 tsp Garam Masala
- β1/2 tsp Cumin
- β1/2 tsp Coriander
- β1/4 tsp Chili Flakes
- β2 tsp Coconut Oil
- β1-inch piece Ginger
- βto taste Salt
- βto taste Black Pepper
- βchopped (optional) Fresh Cilantro

Bring a large pot of salted water to a boil and cook the pasta according to package instructions.

In a large skillet, heat the coconut oil over medium-high heat.

Add the garam masala, cumin, coriander, chili flakes, ginger, salt, and black pepper to the skillet and cook for 1 minute.
