Spicy Cherry Tomato Pasta
A flavorful and spicy pasta dish from Portugal with a Thai twist, featuring cherry tomatoes and a hint of earthy undertones.
Ingredients
- β8 oz pastalinguine or fettuccine work well
- β1 pint cherry tomatoeshalve or quarter depending on size
- β2 tbsp portuguese extra virgin olive oilor other mild olive oil
- β3 cloves garlicminced
- β1 tsp mildly hot Thai red pepper flakesor more to taste
- β1/4 cup fresh basil leaveschopped
- β1 tsp saltor to taste
- β1/4 tsp black pepperor to taste

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to release their juices. Season with salt and pepper to taste.

Stir in the Thai red pepper flakes and cook for an additional minute.

Add the cooked pasta to the skillet, tossing to combine with the tomato mixture. If the pasta seems dry, add a bit of the reserved pasta water.

Stir in the chopped basil leaves and cook for an additional minute until wilted.
