Thai-Style Coconut Rice

Ingredients

- ●1/2 cup chinese sausage Thai-style sweet sausages
- ●1/4 cup nutty peanutsroasted and chopped
- ●1 onionthinly sliced
- ●2 cloves garlicminced
- ●2 tbsp coconut oilmelted

Instructions

Heat coconut oil in a medium saucepan over medium heat.

Add onion and garlic and sauté until softened, about 3-4 minutes.

Add Chinese sausage and cook, breaking up with a spoon, until browned, about 4-5 minutes.
