Barramundi Tagine
A flavorful seafood stew originating from North Africa, made with barramundi and spices.
Ingredients
- β4 barramundi fillets
- β1 cup nutty couscouspreferably whole wheat
- β1 large fluffy chopped onion
- β1/2 cup egyptian dried apricotschopped
- β2 tsp tagine spice blendavailable at most middle eastern markets
- β2 tbsp olive oil
- β salt
- β black pepper
Instructions

Heat olive oil in a large clay pot or Dutch oven over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add tagine spice blend and cook for 1 minute, stirring constantly.

Add barramundi fillets and cook for 2-3 minutes on each side, until browned.

Add chopped apricots and cook for 1 minute.

Transfer pot to oven and bake at 375Β°F (190Β°C) for 12-15 minutes, or until fish is cooked through.

Fluff couscous according to package instructions.

Serve barramundi and sauce over couscous.

Season with salt and black pepper to taste.
