Peruvian Stir Fry
A flavorful and nutritious Peruvian-inspired stir fry made with juicy chicken, nutty quinoa, and sweet dates. This dish is perfect for a quick weeknight dinner.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1 cup quinoarinsed and drained
- β1 cup datespitted and sliced
- β2 tablespoons coconut oilfor stir-frying
- β1 medium peruvian aji amarillo pepperdiced
- β1/4 cup fresh cilantrochopped

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil and stir in the diced aji amarillo pepper. Cook for 1-2 minutes until fragrant.

Add the sliced dates and cook for an additional 2-3 minutes until they start to soften.

Stir in the cooked quinoa and cook for 1-2 minutes until heated through.
