Malaysian-Style Grilled Pork Satay
A traditional Southeast Asian dish, this recipe features marinated pork grilled to perfection and served with a spicy peanut sauce. The combination of flavors and textures is a true delight.
Ingredients

- β2 tbsp oilyvegetable oil for grilling
- β1 cup coconut milkfor marinade
- β2 tbsp fish saucefor marinade
- β2 tbsp grated gingerfor marinade
- β1 tsp chili flakesfor marinade
- β1 cup peanutsfor peanut sauce
- β2 tbsp coconut sugarfor peanut sauce
- β1 cup waterfor peanut sauce

In a large bowl, whisk together coconut milk, fish sauce, grated ginger, and chili flakes.

Add the sliced pork to the marinade and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat. Thread the marinated pork onto skewers, leaving a small space between each piece.

Brush the grill with oily and cook the satay for 5-7 minutes per side, or until cooked through.

Meanwhile, make the peanut sauce by blending peanuts, coconut sugar, and water in a blender until smooth.

Serve the grilled satay with the peanut sauce for dipping.

Garnish with fresh cilantro leaves and serve immediately.

Note: Traditionally, satay is grilled over charcoal, but a gas grill or grill pan will also work well.
