Venezuelan Chicken Empanadas
Delicious empanadas filled with flavorful chicken, perfect for a dinner or snack.
Ingredients
- β1 pound chicken breast
- β1 package (2 dozen) empanada doughhomemade or store-bought
- β3 cloves, minced garlic
- β1/4 cup olive oil
- β1/2 cup chicken broth
- β1 teaspoon cumin
- β1/2 teaspoon paprika
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β1 cup shredded cheese (optional)

Preheat oven to 375Β°F (190Β°C).

In a large pan, heat olive oil over medium heat.

Add minced garlic and cook for 1-2 minutes, until fragrant.

Add chicken breast and cook until browned, about 5-6 minutes.

Add chicken broth, cumin, paprika, salt, and pepper. Stir to combine.

Reduce heat to low and simmer for 10-12 minutes, or until chicken is cooked through.

Let chicken cool before shredding it.

Roll out empanada dough and cut into circles using a cookie cutter or glass.

Place a tablespoon of shredded chicken in the center of each dough circle.

Fold the dough in half and press edges to seal.

Brush tops with egg wash (beaten egg mixed with a little water) and bake for 20-25 minutes, or until golden brown.
