Lamb Skewers with Roasted Vegetables
Tender lamb skewers served with a variety of roasted vegetables, perfect for a summer evening. The combination of herbs and spices adds a delicious flavor to this dish.
Ingredients
- β500g Lamb shoulder, cut into 1-inch pieces
- β2 tbsp Olive oil
- β2 cloves Garlic, minced
- β2 tbsp Lemon juice
- β1 tsp Salt
- β1 tsp Black pepper
- β Dutch ovenfor roasting vegetables
- β1 cup Mixed vegetables (such as zucchini, bell peppers, onions)
- β10-12 Skewers

Preheat the oven to 425Β°F (220Β°C).

In a large bowl, whisk together olive oil, garlic, lemon juice, salt, and black pepper. Add the lamb pieces and toss to coat.

Thread the lamb pieces onto the skewers, leaving a small space between each piece.

Place the skewers on a baking sheet lined with parchment paper.

Roast the lamb skewers in the preheated oven for 12-15 minutes, or until cooked through.

While the lamb is cooking, toss the mixed vegetables with olive oil, salt, and black pepper in a separate bowl.
