Filipino Roasted Quinoa Bowl
A flavorful and nutritious quinoa bowl made with roasted chicken and vegetables, inspired by Filipino cuisine.
Ingredients

- β1 lb boneless chicken breast
- β2 cups mixed vegetables (bell peppers, carrots, broccoli)
- β2 tbsp coconut oil
- β2 tbsp soy sauce
- β1 tbsp lime juice
