Mexican Guanciale Tacos

- β8-10 Corn tortillas
- β1 medium, diced Roasted sweet potatoes
- β1/4 cup, chopped Cilantro
- β2 tablespoons Lime juice
- βto taste Salt
- β1 teaspoon Cumin
- βto taste Black pepper
- β8 ounces (optional) Sour cream
- β8 ounces (optional) Shredded cheese
