Lamb Irish Stew
A hearty, comforting stew made with tender lamb and flavorful Irish ingredients.
Ingredients
- β1.5 pounds Lamb Shouldercut into 1-inch cubes
- β2 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β1 large Onionschopped
- β3 cloves Garlicminced
- β2 tablespoons All-purpose Flour
- β2 cups Beef Broth
- β1 cup Red Wine
- β2 sprigs Thyme
- β2 sprigs Rosemary

Preheat the oven to 300Β°F (150Β°C).

Season the lamb cubes with salt and pepper.

Heat a large Dutch oven over medium-high heat and brown the lamb cubes on all sides.

Remove the lamb from the pot and set aside.

Add the chopped onions to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the chopped carrots and potatoes to the pot and cook for 5 minutes.

Add the browned lamb back to the pot, along with the beef broth, red wine, thyme, and rosemary.

Bring the mixture to a boil, then cover the pot and transfer it to the preheated oven.

Bake for 2 1/2 hours, or until the lamb is tender and the vegetables are cooked through.
