Irish Lamb Stew
A hearty and flavorful Irish-inspired lamb stew made with tender lamb, roasted vegetables, and a rich broth. Serve with a side of steamed rice for a delicious and satisfying meal.

- β3 medium Carrots
- β2 large Potatoes
- β1 large Onion
- β3 cloves Garlic
- β2 tablespoons Tomato paste
- β1 cup Red wine
- β2 cups Chicken broth

Preheat oven to 300Β°F (150Β°C).

Season the lamb shoulder with salt and pepper.

In a large Dutch oven, brown the lamb on all sides over medium-high heat.

Add the carrots, potatoes, onion, and garlic to the pot. Cook for 5 minutes.

Add the tomato paste and cook for 1 minute.

Add the red wine and chicken broth to the pot. Bring to a boil.
