Vietnamese Roasted Noodle Dish

- β2 tbsp light soy sauce
- β1/4 cup roasted peanuts
- β1 bunch scallions
- β2 tbsp coconut oil
- β1 tsp salt
- β1 tsp black pepper

Preheat the oven to 400Β°F (200Β°C).

Cook the noodles according to the package instructions.

In a large bowl, whisk together the soy sauce, paprika, salt, and black pepper.

Add the cooked noodles to the bowl and toss to coat.

Heat the coconut oil in a pan over medium heat.
