Northern Irish Christmas Glazed Miso Pudding
A rich and savory pudding made with miso paste and a sweet Christmas glaze, inspired by Northern Irish cuisine.
Ingredients
- β1 cup all-purpose flour
- β1 cup dried fruit (currants, raisins, cranberries)
- β2 tbsp miso paste
- β1/2 cup brown sugar
- β2 eggs
- β1 cup heavy cream
- β1/4 cup unsalted butter, melted
- β1/4 cup Christmas glaze (see instructions)

Preheat the oven to 375Β°F (190Β°C).

In a large mixing bowl, whisk together the flour, dried fruit, and miso paste.

In a separate bowl, whisk together the brown sugar, eggs, and heavy cream.

Add the melted butter to the sugar mixture and whisk until combined.

Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.

Pour the batter into a greased 9x13 inch baking dish.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

While the pudding is baking, prepare the Christmas glaze by whisking together 1/4 cup powdered sugar and 2 tbsp milk.

Remove the pudding from the oven and brush the Christmas glaze over the top.

Return the pudding to the oven and bake for an additional 5-7 minutes, or until the glaze is set.
