Spanish Baked Eggs
A simple and flavorful breakfast dish where eggs are baked in a spicy Spanish-inspired mixture of roasted vegetables.
Ingredients

- β2 Roasted red peppersdrained and chopped
- β1 can Roasted tomatoesdrained and chopped
- β1/4 cup Spanish olivespitted
- β2 cloves Garlicminced
- β2 tbsp Olive oil
- β1 baguette Breadcut into cubes
- β1/2 cup Shredded cheese
- β1/2 tsp Chili flakes

Preheat oven to 375Β°F (190Β°C).

Cut the bread into cubes and toast in the oven for 5 minutes.

In a large bowl, whisk together eggs, garlic, chili flakes, and a pinch of salt.

Add the roasted red peppers, tomatoes, olives, and shredded cheese to the bowl.

Pour the egg mixture into a 9x13 inch baking dish.

Arrange the toasted bread on top of the egg mixture.

Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the bread is golden brown.
