Welsh Red Potato Gratin
A simple and flavorful gratin dish made with Welsh red potatoes and a hint of cheese.
Ingredients
- ●2 large Welsh red potatoespeeled and thinly sliced
- ●1 cup, grated gruyère cheesedivided
- ●1 medium, thinly sliced red onion
- ●2 cloves, minced garlic
- ●2 tablespoons unsalted butter
- ●1 tablespoon all-purpose flour
- ●1/2 cup heavy cream
- ●1/4 teaspoon nutmeg
- ●to taste salt

Preheat the oven to 375°F (190°C).

In a large saucepan, combine the sliced potatoes and enough cold water to cover them. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 5 minutes.

Drain the potatoes and set them aside to dry.

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced red onion and cook until it's softened and lightly browned, about 8 minutes.

Add the minced garlic to the skillet and cook for 1 minute.

In a separate saucepan, melt the remaining 1 tablespoon of butter over medium heat. Add the flour and whisk to make a roux, cooking for 1 minute.

Slowly pour in the heavy cream, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook until it thickens, about 5 minutes.

Stir in 1/2 cup of the grated Gruyère cheese until it's melted and smooth. Season the sauce with nutmeg and salt to taste.

In a large baking dish, create a layer of potatoes. Top with a layer of the onion and garlic mixture, followed by a sprinkle of Gruyère cheese.

Continue alternating layers of potatoes, onion mixture, and cheese until all the ingredients are used up, finishing with a layer of cheese on top.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 20-25 minutes, or until the top is golden brown and the potatoes are tender.
