Padded Lentil Stew

- β1 cup Lentils
- β1 pound Padded
- β1 pound Syrian
- β1 medium Onion
- β3 cloves Garlic
- β2 medium Carrots
- β2 medium Potatoes
- β2 tablespoons Tomato paste
- β2 tablespoons Olive oil

Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and cook until the onion is translucent.

Add the padded and Syrian and cook until browned, breaking it up with a spoon as it cooks.

Add the lentils, carrots, potatoes, and tomato paste. Stir to combine.

Add 4 cups of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 30 minutes.
