Saudi Arabian Dal Stew
A flavorful and nutritious stew originating from Saudi Arabia, made with aromatic spices and protein-rich dal.
Ingredients
- β2 tablespoons arabianuse a mix of ground spices including cumin, coriander, and turmeric
- β1 cup dalred or yellow split lentils work well
- β1 teaspoon pepperyblack or white pepper
- β1/2 cup silkyuse coconut milk or heavy cream for a rich texture
- β1 cup beanskidney beans or cannellini beans work well
- β2 tablespoons saudiuse a mix of olive oil and safflower oil
- β4 cups wateruse vegetable or chicken broth for added flavor
- β1 teaspoon saltto taste
- β1 medium onionchopped
- β3 cloves garlicminced

Heat the saudi oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the dal, beans, water, salt, and arabian spice mix. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the dal is tender.

Stir in the silky coconut milk and cook for an additional 5 minutes, or until heated through.

Serve hot, garnished with chopped fresh cilantro or parsley if desired.
