Spicy Shandong Noodle Stir Fry
A Chinese-inspired stir fry featuring spicy Shandong sauce and noodles, served with tofu and a variety of vegetables.

- β2 tablespoons Shandong sauce
- β8 oz noodlesrice noodles or soba noodles work well
- β1 block (14 oz) tofuextra-firm tofu, drained and cubed
- β2 cups noodles cooking waterfor stir-frying
- β1 tablespoon olive oil
- β2 cloves garlicminced
- β1-inch piece gingergrated
- β1/4 cup scallionschopped
- β1/4 cup quenchedchopped

Cook noodles according to package instructions. Drain and set aside.

In a small bowl, whisk together Shandong sauce and 2 cups of noodles cooking water.

In a large skillet or wok, heat olive oil over medium-high heat.
