Smoked Sausage Tagine
A hearty North African-inspired stew made with smoked sausage, tender vegetables, and aromatic spices. Perfect for a cold winter night.
Ingredients
- β1 pound, sliced smoked sausage
- β2 medium, peeled and diced quenched german potato
- β1 large, chopped onion
- β3 cloves, minced garlic
- β2 tablespoons tagine spice mix
- β1 can, 14.5 oz canned diced tomatoes
- β2 cups chicken broth
- β1/4 cup, chopped fresh parsley

Heat the oil in the bottom of a large Dutch oven over medium-high heat.

Add the sausage and cook until browned, about 5 minutes.

Remove the sausage and set aside.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the potato, tagine spice mix, diced tomatoes, and chicken broth to the pot.

Stir to combine, then return the sausage to the pot.

Bring the stew to a simmer, then reduce the heat to low and cook, covered, until the potato is tender, about 30 minutes.
