Sri Lankan-Style Vegan Stir Fry
A flavorful and nutritious stir-fry made with a variety of vegetables and a hint of Sri Lankan spices, all vegan and ready in under 30 minutes.
Ingredients

- β1 cup Quick-cooking rice noodles
- β2 cups Mixed vegetables (bell peppers, carrots, broccoli)
- β2 teaspoons Sri Lankan curry powder
- β1 tablespoon Vegetable oil
- β2 tablespoons Lime juice
- β1 tablespoon Soy sauce (make sure it's vegan)

Heat the oil in a large skillet or wok over medium-high heat.

Add the mixed vegetables and cook until they start to soften, about 3-4 minutes.

Add the Sri Lankan curry powder and stir-fry for 1 minute.

Add the quick-cooking rice noodles and stir-fry for another 2-3 minutes, until they're well coated with the curry powder and starting to brown.

Add the sliced almonds and stir-fry for 1 minute.

Add the soy sauce and lime juice, and stir-fry for another minute.

Season with salt to taste.

Serve hot, garnished with additional lime wedges if desired.
