Thai-Style Barbeque Chicken
Sweet and spicy Thai-inspired barbeque chicken, perfect for a quick dinner. Serve with steamed vegetables and rice for a balanced meal.
Ingredients

- β2 tablespoons Thai red curry pasteavailable in most supermarkets or Asian markets
- β1 cup Barbeque saucesweet and spicy
- β1 cup Khanom jeen noodlesThai rice noodles
- β2 cups Quick-cooking ricepreferably jasmine rice
- β1/4 cup Thai basilchopped
- β2 tablespoons Sesame oilfor stir-frying
- β2 tablespoons Brown sugarfor balance sweetness
- β2 tablespoons Lime juicefreshly squeezed

1. Cook the quick-cooking rice according to the package instructions. Set aside.

2. In a large bowl, whisk together curry paste, barbeque sauce, brown sugar, and sesame oil.

3. Add the chicken breasts to the marinade and mix until well-coated.

4. Preheat a grill or grill pan to medium-high heat. Grill the marinated chicken for 5-6 minutes per side, or until cooked through.
