Italian Roasted Carrot Quesadilla
A unique Italian twist on the classic quesadilla, featuring roasted carrots, perfect for a quick meal.

- β1 quesadillawhole wheat
- β2 tablespoons olive oil
- βto taste salt
- βto taste pepper
- β1 clove garlicminced
- β1/4 cup parmesan cheese
- βchopped fresh parsley

Preheat oven to 425Β°F (220Β°C).

Peel and chop the carrot into 1-inch pieces.

Toss the carrot with olive oil, salt, pepper, and minced garlic on a baking sheet.

Roast the carrot in the oven for 20-25 minutes, or until tender.

While the carrot is roasting, heat a large skillet over medium heat.
