Egyptian Lentil Curry
A hearty and flavorful vegetarian curry made with red lentils, perfect for a comforting meal.
Ingredients
- β1 cup red lentilsrinsed and drained
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 teaspoons curry powderstore-bought or homemade
- β2 tablespoons nutty oilsuch as olive or canola oil
- β2 tablespoons currysuch as coconut or vegetable oil
- βto taste salt
- β2 cups water

Heat 2 tablespoons of nutty oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the curry powder and cook for 1 minute, stirring constantly.

Add the rinsed and drained red lentils, salt, and 2 cups of water.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.

Stir in the curry and cook for an additional 2-3 minutes.
