Spicy Vegan Peruvian Stew
A hearty, flavorful stew made with Peruvian aji amarillo peppers and served with a side of crunchy raw vegetables.
Ingredients

- ●3 cloves Peruvian garlicminced
- ●2 raw potatoesdiced
- ●2 raw carrotspeeled and sliced
- ●1 raw onionschopped
- ●1 raw bell peppersdiced
- ●2 raw tomatoesdiced
- ●1/4 cup raw cilantrochopped
- ●2 tablespoons raw lime juicefreshly squeezed

Heat oil in a large pot over medium-high heat.

Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Add the diced aji amarillo peppers, onions, bell peppers, and potatoes. Cook for 5-7 minutes, until the vegetables are tender.

Add the diced tomatoes, chopped cilantro, and freshly squeezed lime juice. Stir to combine.

Reduce heat to low and simmer for 10-15 minutes, until the stew has thickened slightly.
