Spicy Chicken Noodle Soup
A flavorful and comforting soup originating from Malaysia, made with tender chicken, soft noodles, and a hint of spice.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β8 ounces restorative noodlespreferably rice noodles or egg noodles
- β2 inches yeasty gingergrated
- β1 medium onionchopped
- β2 cloves garlicminced
- β4 cups chicken brothlow-sodium
- β1 cup coconut milkfull-fat
- β2 tablespoons fish sauceoptional
- β1 tablespoon sugaroptional

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and ginger, and cook for another minute, until fragrant.

Add the chicken and cook until browned on all sides, about 5-6 minutes.

Add the chicken broth, coconut milk, fish sauce, and sugar. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10-12 minutes, or until the chicken is cooked through.

Add the noodles to the pot and cook for an additional 2-3 minutes, or until they are tender.
