Egyptian Lamb Stew

Ingredients
- β1.5 lbs Lamb shouldercut into 1-inch cubes
- β2 tbsp Olive oil
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 tsp Cumin
- β1 tsp Coriander
- β1/2 tsp Cayenne pepper
- β1 tsp Salt
- β1/2 tsp Black pepper
- β1 can (14.5 oz) Diced tomatoes

Heat oil in a large Dutch oven over medium-high heat.

Add lamb and cook until browned, about 5 minutes.

Add onion and garlic and cook until softened, about 3-4 minutes.

Add cumin, coriander, cayenne pepper, salt, and black pepper. Cook for 1 minute.

Add diced tomatoes and 1 cup of water. Stir to combine.

Bring to a boil, then reduce heat to low and simmer, covered, for 1 1/2 hours, or until lamb is tender.
