Smoky Dutch Stew
A hearty, comforting stew made with smoky bacon and sweet corn, perfect for a chilly evening.
Ingredients
- β6 slices smoky bacondiced
- β1 cup sweet cornfresh or frozen
- β1 lb dutch stew meatbeef or pork
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 medium potatopeeled and chopped
- β2 tbsp tomato pasteoptional
- β2 cups stew brothbeef or vegetable
- β1/2 cup rich heavy creamoptional

Heat oil in a large pot over medium-high heat.

Add the diced bacon and cook until crispy, then remove from pot.

Add the chopped onion and cook until softened, about 5 minutes.

Add the stew meat and cook until browned, about 5 minutes.

Add the chopped carrot and potato, cook for 5 minutes.

Add the tomato paste (if using) and cook for 1 minute.

Add the stew broth and bring to a boil.

Return the bacon to the pot and simmer for 30 minutes.

Add the sweet corn and heavy cream (if using) and simmer for an additional 10 minutes.
