Irish Kidney Bean Stew
A hearty and comforting Irish stew made with rich, smoky flavor and tender kidney beans. Perfect for a cold winter's night.
Ingredients
- β1 lb Rich Irish Stew Meat (Beef or Lamb)
- β1 can Kidney Beans (Canned or Cooked)
- β1 medium Onion
- β2 medium Carrots
- β2 medium Potatoes
- β6 slices Smoked Baconoptional
- β1 tsp Allspice
- β1 tsp Thyme
- βto taste Salt
- βto taste Black Pepper
- β1 cup Guinness Stout Beeroptional

1. In a large Dutch oven, cook the smoked bacon over medium heat until crispy. Remove the bacon and set aside.

2. Add the onion, carrots, and potatoes to the pot and cook until the vegetables are tender.

3. Add the stew meat and cook until browned on all sides.

4. Add the kidney beans, allspice, thyme, salt, and pepper to the pot. Stir to combine.

5. If using Guinness stout, add it to the pot and stir to combine.

6. Cover the pot and bring the stew to a boil. Reduce the heat to low and simmer for 1 hour.

7. Add the cooked bacon back to the pot and stir to combine.

8. Serve the stew hot, garnished with fresh herbs if desired.
