Spanish Cod Paella
A classic Spanish dish made with cod, rich saffron-infused rice, and savory vegetables.
Ingredients

- β1 cup Spanish rice
- β1/2 cup ChorizoChopped
- β1/2 cup ShrimpPeeled and deveined
- β2 tablespoons Vegetable oil
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β1 medium TomatoDiced
- β1 teaspoon Saffron threads
- β1/2 teaspoon Smoked paprika
- β Salt
- β Black pepper

Heat the vegetable oil in a large paella pan over medium-high heat.

Add the chorizo and cook until browned, about 2-3 minutes.

Add the onion and garlic and cook until the onion is translucent, about 3-4 minutes.

Add the shrimp and cook until pink, about 2-3 minutes.

Add the cod fillets and cook for 2-3 minutes on each side.

Add the diced tomato, saffron threads, smoked paprika, salt, and black pepper.

Add the Spanish rice and stir to combine with the vegetables and seafood.

Cook for 5-7 minutes, or until the rice is tender and the liquid has been absorbed.
