Uruguayan Beef Stew
A hearty and flavorful stew originating from Uruguay, made with rich beef and served with crusty bread.
Ingredients
- ●1 pound Rich Beef Stew MeatCut into 1.5-inch cubes
- ●1 large OnionChopped
- ●3 cloves GarlicMinced
- ●2 tablespoons Oat FlourOptional for thickening
- ●1 teaspoon Stew SeasoningCustom blend or store-bought
- ●1 cup Red WineOptional, can substitute with beef broth
- ●2 cups Beef BrothLow-sodium
- ● Salt and PepperTo taste
- ●1/4 cup Fresh ParsleyChopped, for garnish

Heat a large Dutch oven or pot over medium-high heat.

Add a small amount of oil and sear the beef cubes until browned, about 5 minutes.

Remove the browned beef from the pot and set aside.

Reduce heat to medium and add more oil if necessary.

Sauté the chopped onion until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the stew seasoning and cook for 1 minute, until fragrant.

Return the browned beef to the pot and add the red wine (if using).

Scrape up any browned bits from the bottom of the pot.

Add the beef broth and bring to a boil.

Return the heat to low and simmer, covered, for 2-3 hours, or until the beef is tender.

Stir in the oat flour (if using) to thicken the stew.
