Thai Oxtail Braised Stew
A rich and zesty Thai-inspired oxtail stew made with braised oxtail and a blend of spices.
Ingredients
- β2 pounds oxtailcut into 2-inch pieces
- β2 tablespoons coconut oil
- β1 large onionchopped
- β3 cloves garlicminced
- β2 tablespoons Thai red curry paste
- β2 tablespoons fish sauce
- β1 tablespoon sugar
- β2 cups chicken broth
- β1 cup coconut milk
- β1/4 cup Thai basilchopped

Heat oil in a large Dutch oven over medium-high heat.

Brown the oxtail in batches, about 5 minutes per batch.

Remove the browned oxtail from the pot and set aside.

Reduce heat to medium and cook the onion until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Stir in the curry paste and cook for 1 minute.

Add the fish sauce and sugar and stir to combine.

Add the browned oxtail back to the pot and pour in the broth.

Bring to a boil, then cover and transfer to the oven.

Braise for 2 1/2 hours, or until the meat is tender.

Stir in the coconut milk and cook for an additional 10-15 minutes.
