Roasted Mediterranean Bean Gratin
A hearty, flavorful dish combining the tastes of the Mediterranean with the comfort of a gratin. This recipe is perfect for a weeknight dinner.
Ingredients
- β1 cup, trimmed Long beansany color
- β2 cups, sliced Roasted red peppers
- β2 tablespoons Olive oilfor roasting
- β2 cloves, minced Garlic
- β2 tablespoons Tomato paste
- β1/2 cup Crumbled feta cheeseoptional
- β1 teaspoon Mediterranean seasoningor to taste

Preheat the oven to 375Β°F (190Β°C).

Toss the long beans with 1 tablespoon of olive oil and season with salt and pepper. Roast for 10-12 minutes, or until tender.

While the beans are roasting, combine the sliced red peppers, minced garlic, tomato paste, and Mediterranean seasoning in a bowl.

In a greased 9x13 inch baking dish, arrange the roasted long beans in the bottom.

Pour the pepper mixture over the beans and top with crumbled feta cheese (if using).

Drizzle the remaining 1 tablespoon of olive oil over the top.
