Peruvian Roasted Lima Causa
A Peruvian dish combining roasted lima beans with tamarind pulp for a sweet and tangy flavor, served in a causa crust.
Ingredients
- β1 cup Lima beans
- β1/2 cup Roasted red pepper
- β2 tbsp Tamarind pulp
- β1 cup Causa crust (potato and corn)
- β2 tbsp Olive oil
- βto taste Salt
- βto taste Black pepper
- β1/4 cup Fresh cilantro
- β2 tbsp Lime juice

Preheat oven to 375Β°F (190Β°C).

Prepare the causa crust according to package instructions.

In a pan, heat the olive oil over medium heat. Add the roasted red pepper and cook for 2-3 minutes.

Add the lima beans to the pan and cook for an additional 2-3 minutes.

Stir in the tamarind pulp, salt, and black pepper. Cook for 1 minute.

Spoon the mixture into the prepared causa crust.

Drizzle with lime juice and garnish with fresh cilantro.
