Sweet Roasty Yam Pancakes
A delicious and fluffy pancake made with roasted sweet yams, perfect for a warm breakfast or brunch.
Ingredients

- ●1/4 cup roastymashed
- ●1/2 cup sweetgranulated
- ●4-6 mix pancakes
- ●2 tablespoons fonduemelted butter

Preheat oven to 400°F (200°C).

Pierce the yam with a fork several times and roast for 45-60 minutes, or until tender.

Let the yam cool, then mash.

In a large bowl, whisk together the pancake mix, granulated sweet, and melted fondue.

Add the mashed yam to the dry ingredients and stir until combined.

Heat a non-stick skillet or griddle over medium heat.

Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle.

Cook the pancakes for 2-3 minutes, or until bubbles appear on the surface.
