Polish Lamb Stew
A hearty and flavorful stew originating from Poland, made with tender lamb, robust spices, and roasted vegetables.
Ingredients
- β1 lb lamb shouldercut into 1-inch pieces
- β1 medium onionchopped
- β2 medium carrotchopped
- β2 large potatopeeled and cubed
- β3 cloves garlicminced
- β2 cups robust beef brothhomemade or store-bought
- β1 tsp dried thymefresh or dried
- β1 tsp dried rosemaryfresh or dried
- β1 lb polish sausagesliced
Instructions

Heat oil in a large Dutch oven over medium-high heat. Add lamb and cook until browned, about 5 minutes.

Remove lamb from pot and set aside. Add more oil if necessary, then add onion, carrot, and potato. Cook until vegetables are tender, about 10 minutes.

Add garlic, thyme, and rosemary to pot. Cook for 1 minute.

Add beef broth to pot and bring to a boil. Return lamb to pot and cover.

Transfer pot to the oven and braise for 2 hours, or until lamb is tender.

Add polish sausage to pot and continue to braise for an additional 30 minutes.

Season stew with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
