Robust German Pork Stew
A hearty German-inspired stew filled with tender pork and robust flavors.
Ingredients
- ●1 1/2 pounds pork shoulder, cut into 2-inch pieces- Use a meat thermometer to ensure the pork reaches 145°F (63°C)
- ●1 cup robust german beer- Use a dark German lager or bock
- ●1 large onion, chopped
- ●2 medium carrot, peeled and chopped
- ●2 stalks celery, chopped
- ●3 cloves garlic, minced
- ●2 tablespoons tomato paste
- ●2 tablespoons all-purpose flour
- ●2 cups beef broth
- ●1 teaspoon spiced mustard- Such as Düsseldorfer mustard

Heat oil in a large Dutch oven over medium-high heat.

Brown the pork pieces on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Reduce heat to medium and add the onion, carrot, and celery.

Cook until the vegetables are tender, about 10 minutes.

Add the garlic and cook for 1 minute.

Stir in the tomato paste and cook for 1 minute.

Add the flour and cook for 1 minute.

Gradually add the beef broth, whisking continuously.

Return the pork to the pot and bring to a boil.

Reduce heat to low and simmer, covered, for 2 1/2 hours, or until the pork is tender.
