Toad in the Hole
A traditional British dish consisting of sausages cooked in a Yorkshire pudding batter.
Ingredients
- β4 SausagesPork sausages, preferably British bangers
- β2 tablespoons Beef drippings or oilFor greasing the pan
- β1 cup All-purpose flourFor the Yorkshire pudding batter
- β2 large EggsBeaten for the Yorkshire pudding batter
- β1 cup MilkFor the Yorkshire pudding batter
- β Salt and pepperTo taste
- β1 medium OnionChopped, optional

Preheat oven to 425Β°F (220Β°C).

Heat the beef drippings or oil in a 12-cup muffin tin or a 9x13-inch baking dish over medium-high heat.

Add the sausages and cook until browned on all sides, about 5 minutes.

Remove the sausages from the pan and set aside.

In a large bowl, whisk together the flour, eggs, milk, salt, and pepper until smooth.

Pour the batter over the sausages in the pan.

Return the sausages to the pan and place in the oven.

Bake for 25-30 minutes, or until the Yorkshire pudding is golden brown and puffed.

Serve hot, garnished with chopped onion if desired.
