Dutch Roast Chicken
A hearty Dutch-inspired roast chicken dish with a rustic twist.
Ingredients
- ●1 whole chicken (3 lbs) chickenfresh
- ●2 tbsp roastDutch-style mustard
- ●2 tbsp rusticolive oil
- ●1 tsp saltpreferably sea salt
- ●1 tsp black pepperground
- ●3 cloves garlicminced
- ●1 medium onionchopped

1. Preheat oven to 425°F (220°C).

2. Rinse the chicken and pat it dry with paper towels.

3. In a small bowl, mix together the olive oil, mustard, salt, and black pepper.

4. Rub the mixture all over the chicken, making sure to get some under the skin as well.

5. Place the chopped onion and minced garlic inside the cavity of the chicken.

6. Truss the chicken with kitchen twine and place it in a roasting pan.

7. Roast the chicken in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
