Grilled Beef Skewers with Peruvian Flair
Marinated beef skewers cooked to perfection with a Peruvian twist. A delicious and flavorful dish perfect for a summer evening.
Ingredients
- β1 pound Beef (blade steak), cut into 1-inch pieces
- β1/4 cup Peruvian aji amarillo pepper sauce
- β1/4 cup Savory yogurt
- β1/4 cup Crisp onions, chopped
- β1/4 cup Feather-like cilantro leaves
- β10-12 Skewers (wooden or metal)
- βas needed Salt and pepper
- βas needed Oil for brushing

In a large bowl, whisk together Peruvian aji amarillo pepper sauce, savory yogurt, and salt. Add the beef pieces and marinate for at least 30 minutes.

Preheat grill to medium-high heat. Thread the marinated beef onto skewers, leaving a small space between each piece.

Brush the grill with oil to prevent sticking. Grill the skewers for 8-10 minutes per side, or until the beef reaches 145Β°F for medium-rare.

During the last 2 minutes of grilling, brush the skewers with additional aji amarillo pepper sauce. Remove from grill and garnish with crisp onions and cilantro leaves.
