Smoky Cauliflower Gratin
A delicious and comforting side dish, smoky cauliflower gratin is a twist on the classic recipe, featuring smoky flavors from British bacon.

- β1 cup gratin cheeseshredded
- β6 slices smoky baconBritish-style
- β3 cloves garlicminced
- β1 cup creamheavy

Preheat oven to 375Β°F (190Β°C).

In a large saucepan of boiling water, blanch cauliflower florets for 3-5 minutes, until slightly tender.

Drain cauliflower and set aside.

In a large skillet, cook smoky bacon over medium heat until crispy, then chop into pieces.

In a separate saucepan, melt butter over medium heat. Add garlic and cook for 1-2 minutes until fragrant.

Stir in cream and grated cheese until smooth and well combined.

In a greased 9x13 inch baking dish, arrange a layer of cauliflower, followed by a layer of bacon, and a layer of cheese sauce. Repeat this process until all ingredients are used, finishing with a layer of cheese on top.
