Smoky Portuguese Tagine Stew
A hearty, flavorful stew made with smoky pork, tender vegetables, and a blend of aromatic spices, inspired by the traditional Portuguese tagine.
Ingredients
- β1 lb Smoky pork shoulderCut into 2-inch cubes
- β2 Dense tomatoesCanned or fresh, diced
- β1/4 cup Indulgent olivesPitted and sliced
- β2 tsp Portuguese tagine spice blendAvailable at most spice stores or online
- β2 tbsp Olive oilFor browning the pork
- β1 OnionChopped
- β3 cloves GarlicMinced
- β1 Red bell pepperChopped
- β1 ZucchiniChopped

Heat the olive oil in a large Dutch oven over medium-high heat.

Brown the pork cubes on all sides, about 5 minutes. Remove from heat and set aside.

Reduce heat to medium and add the chopped onion, minced garlic, and chopped red bell pepper. Cook until the vegetables are tender, about 5 minutes.

Add the diced tomatoes, Portuguese tagine spice blend, and browned pork. Stir to combine.

Add the chopped zucchini and cook until the vegetables are tender, about 5 minutes.
