Portuguese-Style Roast Pork
A hearty and flavorful roast pork dish inspired by traditional Portuguese cuisine, with a crispy crackling and tender meat.

- ●2 tbsp olive oil
- ●4 cloves garlic
- ●1 tsp smoked paprika
- ●1 tsp salt
- ●1 tsp black pepper
- ●2-3 medium roasted potatoes
- ●2 sprigs fresh rosemary

Preheat oven to 425°F (220°C).

Season the pork shoulder with salt, black pepper, and smoked paprika.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork shoulder until browned on all sides, about 2-3 minutes per side.

Transfer the pork shoulder to a roasting pan and add the garlic cloves to the Dutch oven.

Add the roasted potatoes and fresh rosemary sprigs to the roasting pan with the pork shoulder.

Roast in the preheated oven for 20 minutes per pound, or until the internal temperature reaches 145°F (63°C) for medium-rare.
