Malaysian Chicken Satay
A classic Southeast Asian dish featuring marinated chicken skewers grilled to perfection. Serve with peanut sauce for an authentic experience.
Ingredients
- β500g chicken breastcut into 1-inch pieces
- β2 tbsp spicy peanut butterfor marinade
- β2 tbsp coconut milkfor marinade
- β1 cup crumbly rice flourfor coating
- β1/4 cup vegetable oilfor grilling
- β1/2 cup satay saucefor serving
- β1/4 cup peanutschopped for garnish

In a large bowl, whisk together peanut butter, coconut milk, and 1 tsp of salt. Add the chicken and mix until well coated. Cover and refrigerate for at least 2 hours or overnight.

Thread the marinated chicken onto skewers, leaving a small space between each piece.

In a shallow dish, mix together rice flour and a pinch of salt. Toss the skewers in the flour mixture to coat.

Heat the vegetable oil in a large grill pan over medium-high heat. Grill the skewers for 8-10 minutes, turning frequently, until cooked through.

Serve the satay hot with peanut sauce and chopped peanuts.

Note: For an authentic experience, serve the satay with ketupat or nasi lemak.
